阿根廷人吃牛肉以烤食为主。无论是首都布宜诺斯艾利斯还是内地小城镇,烤肉店随处可见,许多家里也装有烤肉炉或备有活动烤架,甚至郊区一些公园森林里都设有专门的烤肉架。在市中心区的大型烤肉商店门口,立着黑色或棕色的牛肉标本,栩栩如生。落地大玻璃窗内,熊熊花堆旁架着几十斤一块的牛肉,烤肉师傅身穿“高乔人”的服装:黑的毡帽、紧身上衣和绣腿马裤,脖了上系着红围巾。一些烤肉店特意将烤炉装到显眼的位置,让顾客听着滋滋的声音,看着红红的炭火,吃起来更有滋味。

烤肉方法十分简单,生肉切成巴掌大小,一寸来厚,拌上粗盐,直接放到铁箆子上,下面用烧红的木材或木炭加热,不时用肉叉翻面,通过升降铁箆子来调节肉与炭火的距离,以便掌握火候。待肉刚变色时,用刀切开。尚有血水流出时,就可以吃了,这时肉质最鲜嫩多汁,口感滋味俱佳,时间一长水分消失过多,就咬不动了。最常烤食的部位是牛脊和腹部的五花肉。盐是主要的作料,有时浇上一点叫做奇米丘里的调料,那是用洋葱和番茄切成小丁,加上醋和一种香拌和而成的。

在阿根廷上自总统,下自百姓,无不以烤肉款待宾客,只不过排场不同而已。前者请专职烤肉师精细烤制,后者就地取材简简单单。在阿根廷几乎每家餐馆的菜单上都有烤肉。餐馆里的烤肉大体上有两种类型,一是烤牛排,有巴掌大,约一指厚;二是类似拼盘的烤肉,将烤好的排骨肉、肉肠、小肠、血肠、肾、胸腺等放在长方形的不锈钢盘子上,底下支架上有几块烧红的木炭保温。其中胸腺最名贵,焦黄酥脆,滋味绝佳。阿根廷人吃喜欢“嫩”牛肉、牛排,他们所说的嫩近乎生肉,中国人通常吃不消。

吃烤牛肉时,各人根据口味自选佐料。如凉拌生菜,西红柿、葱头等可去油腻,也有人爱加上油炸土豆条,同时吃长条面包,喝红葡萄酒。在食客等待进餐时,侍者会先送上一个烤肉大饺,下开胃酒。如在家请客,则先上一段面包夹肉肠,然后才是烤肉正餐。

烤肉虽然简单,但也有一番学问,如火候的掌握,材料的挑选、燃料的选择都有讲究。

在阿根廷,人们常逢节假日到乡间别墅或森林公园野炊烧烤。那里绿草如茵、大树蔽日,林间青烟缭绕,笑声不绝于耳。人们喜欢吃烤肉,不独独是因为它的鲜美,更在于感受那份悠然自得的乡野气氛。
